road fud # 5: swift current chicken sandwich + side salad
INGREDIENTS
* 2 piece fried chicken + mojo potatoes bought on Brooks twoonie tuesday
(can substitute textured vegetable protein)
* 2 whole wheat buns
* 2 tablespoons polish mayo
* 4 piece cheddar cheese, sweaty from ride to swift current
* 1 diced tomato
* 1 diced cucumber
* 2 tablespoons balsamic vinegar
* 2 tablespoons olive oil
* fresh chives from van garden
* salt to taste
Cut up fried chicken or tvp and fry with potato wedges in pan till warm.
Construct 2 sandwiches in this order: half bun > mayo > "chicken" > cheese > tomato > half bun
Mix cucumber, remaining tomato, chives, vinegar and olive oil for first taste of vegetables in days. Add salt to taste.
Enjoy on top of hill overlooking charming industrial park in swift current, sask.
Sunset optional.
road fud # 4: chilli II, son of chilli
INGREDIENTS
* 1 pot leftover chilli (see previous instalment of road fud)
* 4 slices slightly stale bread
* 6 slices cheddar cheese
* thinly sliced onion
* 2 diced chipotle peppers
* 2 tablespoons olive oil
Combine cheese, peppers, onions and slices bread in standard sandwich formation, with bread on the outside and other ingredients nestled within.
Cook sandwich in pan with olive oil until cheese is melted and bread seared.
Serve with cold chilli.
Amazing.
